
Coconut Bread - TWA
Ingredients:
I. Streusel topping
1 cup flour
1/2 cup graham cracker crumbs
1/3 cup sugar
1 1/4 cups white shredded coconut
1 1/2 cups softened sweet butter
II. Batter
2 cups flour
2 cups sugar
1/2 cup white shredded coconut
1 1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract
1 cup oil
1/2 cup milk
1 1/2 cups water
3 eggs
Directions:
Procedure for Streusel Topping:
1. Combine flour, crumbs, sugar and coconut.
2. Add sweet butter in small chunks. Mix until well distributed.
3. Set aside to sprinkle on top of batter.
Procedure for Batter:
1. Combine flour, sugar, coconut, baking powder, salt, water and milk. Mix well.
2. Add eggs, one at a time, beating slightly after each addition.
3. Increase speed and beat for one minute before adding the oil and vanilla.
4. Mix until oil and vanilla until incorporated. Batter will be slightly thick.
5. Pour into greased 9 inch round layer cake pan.
6. Sprinkle topping over the batter.
7. Bake at 275 degrees (F) for 45 minutes or until cake tests done.
8. Remove from oven and cool.
