Ingredients:
1/2 cup softened butter
1 cup granulated sugar
2 eggs
1 cup mashed ripe bananas
1/2 cup sour cream
1/2 tsp vanilla extract
2 cups sifted all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Procedure:
1. Cream butter in bowl until light. Gradually beat in sugar.
2. Beat in eggs one at a time. Add mshed bananas, vanilla and sour cream.
3. Sift together flour, baking powder, baking soda and salt.
4. Fold into the creamed mixture and stir until just blended.
5. Place mixture in buttered, paper lined loaf pans.
6. Bake in pre-heated 350 F oven for 15-18 minutes.
7. Remove from oven and cool.
Note:
For extra rich muffins combine the following ingredients in a small bowl:
1/2 cup chopped walnuts
1/4 cup sugar
1/2 tsp ground cinnamon
Procedure:
1. Sprinkle have of this mixture over the bottom of butter coated cupcake paper
liner. Add banan sour cream mixture as above.
2. Sprinkle remaining mixture on top of mixture and bake as instructed above.
